
This is the perfect recipe for a light and tender texture spongy cake. Its a very versatile cake that can be used in making desserts or for stacking onto other cakes. And there is numerous variation that you can make with this cake, from Cupcakes to different glace toppings
Ingredients:
- 125 ml of milk;
- 70 g of butter;
- 2 eggs at room temperature;
- 1 cup granular sugar;
- 1 cup cake flour;
- 2 tbls of cocoa powder;
- 1 tsp baking powder; and
- 1 tsp vanilla essence.
Method:
- Heat milk and butter on the stove in small saucepan;
- Heat until butter is melted;
- Beat eggs and gradually add the sugar and vanilla essence, beat until pale yellow;
- Sift flour and baking powder and fold roughly into the egg mixture;
- Add the heated the milk and butter to the mixture;
- Mix until the batter us is combined and free from any lumps;
- Separate the mixture into two;
- Add some cocoa powder to the one half and mix until there is no lumps;
- Grease a baking tin;
- Alternate the two mixtures into the tin creating a marble effect
- Preheat an oven on 180ºC
- Bake the cake for 20- 30 minutes until done; and
- Place on a cooling rack, after it has cooled decorate as you prefer.
