Basil Pesto, Tomato, Onion & Chilli Bruschetta

 

Bruschetta is an antipasto (starter dish) from Italy consisting of grilled bread rubbed with garlic and topped with olive oil and salt. Variations may include toppings of tomato, vegetables, beans, cured meat, or cheese.

A popular dish is bruschetta with tomatoes; one recipe popular outside Italy involves basil, fresh tomato, garlic and onion or mozzarella.

Bruschetta is usually served as a snack or appetizer. In some countries, the prepared topping is marketed as bruschetta.

I have a simple quick recipe for delicious antipasto to just have a snacks or enjoy before a great meal

Ingredients:

  • 1 French baguette;
  • 2-3 tablespoons of olive oil;
  • 2 tomatoes, de-seeded and diced;
  • 1 large onion, peeled and diced;
  • 1 large chilli de-seeded and diced (optional);
  • Basil Pesto;
  • Salt & pepper to taste; and
  • Cheese (optional).

Method:

  • Dice the tomatoes onions & chilli, add olive oil and salt & pepper, and mix well;
  • Slice the French baguette diagonally, making sure each slice is about 1-finger thick;
  • Toast the slices of bread for about 5 minutes in the oven at 160  C until golden brown;
  • Spread about ½ teaspoon of pesto on each slice of bread, and top with tomato, onion & Chilli mixture
  • Sprinkled Cheese (optional); and
  • Top with chopped parsley for garnish (optional).

How to set-up the LG NeoChef in Convection mode

  • Press STOP/CANCEL;
  • Press COOK MODE until display shows 180° C;
  • Turn the DIAL until display shows 160° C;
  • Press START for temperature confirmation;
  • Turn the DIAL until display shows ‘5:00’; and
  • Press START (When cooking you can turn the DIAL to increase or decrease cooking time).

Perfect with good glass of white wine!!!
