Naan Khatai (Indian Shortbread)

It’s that time of the year again, when families are preparing for the festival of lights called Diwali.  The festival spiritually signifies the victory of light over darkness, knowledge over ignorance, good over evil, and hope over despair.  Delicious treats are prepared at this time of the year by many Hindu families around the world.  I fondly recall my mom making various sweet and savoury treats at least a week before the festivities began. I remember the nostalgic scents of crushed cardamom, grated nutmeg; freshly baked biscuits, and we would have a hot cup of  masala chai (Indian tea), to taste the freshly prepared Diwali treats. Join me in these festivities by trying out the quick and easy recipe below.

Ingredients: 

  • 3/4 cup castor sugar;
  • 1 cup melted clarified butter (ghee);
  • 1 egg;
  • 2 tsp royal baking powder;
  • 1/2 tsp bicarbonate of soda;
  • 1/4 tsp crushed cardamom seeds or nutmeg; and
  • 2 1/2 cups of flour to form dough.

Method:

  • Put butter in a bowl and add baking powder, sugar, and spices
  • Stir briskly with spoon;
  • add egg and stir until fairly frothy;
  • add flour to form biscuit like dough;
  • divide dough into ping-pong ball sizes;
  • roll between palms of hands
  • slightly flatten with finger (1/2 inch thick)
  • place a blanched whole almond on the top middle;
  • Bake in 180°C until the pale cream , almost like short bread; and
  • cool in pan before removing; removing it hot will cause it to crumble.
