Date Night Pasta

 

 

So I simply love pasta and if I could eat it everyday I would… but in this day and age where people are worried about carbs overload its definitely not possible.

Pasta is usually saved for once in a while…. or date night where the husbands, boyfriend are willing to impress their significant other with a delicious wholesome home cooked meal..😆. And guys this is the perfect meal to gain those brownie points.

I have this really amazing vegetarian pasta receipe that was shared by one of my dearest family members.  This receipe is quick and really easy and not rocket science for those who wants to attempt it for the first time.  Its got vegetables in it, so its totally healthy, right?

Receipe: Serves 4-6

  • 500g of fusilli pasta;
  • 1 small to medium red pepper;
  • 1 small to medium yellow; pepper;
  • 1 small to medium green pepper;
  • 1 packet of mushrooms;
  • Other vegetables of choice;
  • 1 small onion;
  • 4-5 Chillies (optional);
  • Small tub of cream;
  • 4-5 cloves of garlic finely chopped;
  • 3-4 cups of cheese;
  • Corriander for garnish;
  • 1 bottle of Ina Paarmans tomato and basil pasta sauce; and
  • Hand full of basil.

Method:
Vegetables-

  • Slice peppers into small cubes;
  • Thinly slice onions and mushroom and chillies;
  • Heat a medium pan with a little oil. Add your cut onions, chilli and 2 cloves of finely chopped garlic;
  • Sauteè until they soften slightly;
  • Add the rest of the vegetables to the pan and mix.  Season with salt and pepper;
  • Cook veggies unti they all soften; and
  • Finally add your chopped basil and corriander to add flavour and colour to the vegetables.

Pasta sauce-

  • Place a bottle of pasta sauce in a saucepan;
  • Add remainding two cloves of finely chopped garlic, salt and pepper to season;
  • Add mixed herbs to sauce if you desire; and
  • Bring to a boil.

Pasta-

  • Boil fusilli until Al Dentè according to the package.

Toss cooked veggies with pasta.  Placed mixed pasta with vegetables in an oven proof dish; Pour over cream; and add cheese and bake for 5-10min until cheese is completely melted. 

Enjoy it piping hot….
